When I tell you this homemade quiche crust is loved by anyone who tries it, I am not kidding.

Not only do I make this quiche for my family every single week, I also make it for friends and family that are going through a hard time, just had a baby or when guests come over.

It is that. good.

As I mentioned above, this quiche recipe is delicious. So delicious in fact, that everyone I make it for immediately devours it and then begs for the recipe. I am not being dramatic. 

The best part? This quiche is incredibly easy. It uses 4 ingredients for the crust and comes together in a couple minutes. 

No rising time, so you can mix it up, throw it in a pie crust and go. Now that I have hyped it up, let’s get into the recipe.

What materials do you need for this quiche?

The materials needed to make this quiche are minimal, plus it is a one bowl recipe! To make this quiche you will need…

What are the ingredients in the quiche crust?

This crust recipe is light and flaky. You can use it for this quiche, but it would also make a great pumpkin pie crust. If you are low on time, this is the recipe for you! To make the crust you will need…

1/4 cup oil of your choice, keeping in mind the crust will take on a hint of that flavour. I like olive oil or avocado oil. 

1/4 cup of water

1 tsp of salt

1 cup of all purpose flour

How do you make the crust?

  1. Grab yourself a bowl and whisk together the salt, oil and water until it is thick and fully combined.
  2. Next, add in your flour and mix it together. You can use your hands to knead it a little bit but try not to over mix it.
  3. Squish it down into a greased pie plate, using the back of a measuring cup to make it flat. You do NOT need to pre bake this crust.
  4. In the same bowl you made your crust in, make your filling. More info in the next section!

What about the quiche filling?

The filling of this quiche is customizable depending on how dense or fluffy you like your filling. This filling also works as a frittata (just omit the crust) and you can have a carb free breakfast! 

For a basic filling, I like to use 8 whole eggs. Typically we split this quiche into 4 pieces so I feel 2 eggs a section is sufficient.

I choose to use 8 eggs with nothing else which produces a fairly dense filling. I find this keeps me full for longer but I couldn’t tell you why.

If you want a fluffier filling you have some options. 

8 eggs + 1/4-1/2 cup milk

OR

8 eggs + 1/4- 1/2 cup cottage cheese blended together until smooth. 

Add salt and pepper to taste (around 1/2 tsp each) to the filling and there you go!

Quiche topping ideas

For toppings, I have my standard go to and over time, you will learn your favourites too! This is the place to be super creative and play around with different flavour combinations.

My favourite recipe is a basil bacon quiche.

To make the basil bacon quiche you will need…

2-3 pieces of bacon, crispy and crumbled. I always use ready bacon as it is lower in calories and crisps up super well!

4-5 leaves of basil chopped

1/4 cup shredded cheese. I’ve used cheddar, mozzarella and feta before, all with great results.

I have also played around with adding different vegetables and a few good ones are shredded carrots (adds a hint of sweet,) shredded cauliflower, spinach, parsley, dill, oregano, bell peppers, mushroom, onion, and garlic. You can also add ham, chicken, taco beef… Honestly it is hard to go wrong when making a quiche!

This quiche is an instant crowd pleaser! It is simple to make and easy to prep ahead for busy week days!

Ingredients

  • Quiche Crust
  • 1/4 cup oil- olive oil, avocado oil or whatever oil you choose

  • 1/4 cup water

  • 1 tsp salt

  • 1 cup of all purpose flour

  • Filling
  • 8 eggs

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • *optional: 1/4- 1/2 cup milk or cottage cheese

  • Toppings
  • 2-3 slices of ready bacon, crumbled

  • 1/4 cup shredded cheese- cheddar, mozzarella, or feta

  • 3-4 leaves of fresh basil

Directions

  • Preheat the oven to 425F
  • Whisk the oil, water and salt together until it becomes thick and combined.
  • Add the flour into the oil & water mixture and stir to combine. Do not overwork the dough.
  • Grease a pie plate with non stick spray and squish the crust into the bottom. To make it pretty, you can use the back of a measuring cup to flatten it.
  • In the same bowl you made your crust in, crack your eggs and add the salt, pepper and milk if you are using it. Whisk until smooth. If you are using cottage cheese, blend the eggs, cottage cheese, salt and pepper together until smooth.
  • Pour the filling into the crust and then top with crispy bacon crumbles, cheese and basil.
  • Bake for 20 minutes and then check if the top is brown. It is normal for the quiche to puff up. As it cools, it will flatten again. If it is not brown, or if it is still soft in the middle, bake for an additional 5 minutes checking and re-baking if need be.
  • Allow it to cool, slice and serve! If you want to store it, let it cool completely and then place it in a ziploc bag or airtight container. It will last in the fridge up to 4 days. You can reheat it in the microwave or eat it cold. I find eating it cold is just as delicious.

Notes

  • Some other toppings that are great are: shredded carrots (weird but delicious!) shredded cauliflower, bell peppers, mushrooms, onions, ham or any other veggies/ meat you enjoy!
