If you have ever made your own homemade pasta noodles, you will know that there is nothing better. Homemade pasta noodles taste amazing with the perfect bite and can be made into whatever shape you like.
Homemade pasta is very straightforward to make, easy to prepare in bulk and requires little to no equipment. Whether you have a pasta machine or not, you can make these noodles. (Having a pasta machine makes it a lot easier though!)
This pasta recipe is also so fun to make with the kids! You can shape it into whatever you want, using cookie cutters or the like! My kiddos love helping me crank the noodles through the pasta machine. It makes for a super fun bonding experience.

What materials do you need for this homemade pasta?
As I mentioned above, you really don’t need a lot of materials. You will need to begin with a clean counter top as that is where the dough will be kneaded. Beyond that, you will need…
- Measuring cups and spoons
- A pasta machine– This is the one I have and it has served me well for many years!
- If you do not want to use a pasta machine, you will need a rolling pin and a knife
What ingredients do you need to make this pasta dough?
The cool thing about this pasta dough is that it only requires 4 ingredients that you likely already keep on hand.
- 2 cups of all purpose flour
- 3 eggs
- 1/2 tbsp olive oil
- 1/2- 1 tsp salt
How do you make the pasta dough?
- To begin, place your 2 cups of flour on your clean counter top and make a well in the centre. I like to use the back of my measuring cup to do this.
- Next, crack 3 eggs in the centre.
- Add the salt and olive oil and scramble the eggs, taking care to keep the mix in the centre.
- Slowly start adding flour until the dough is incorporated and you can start to knead it without the egg going everywhere.
- Knead the dough for 10 minutes. It may be crumbly in the beginning but keep kneading and it should come together. You want the dough to be smooth and elastic. If it is still dry and crumbly, add a bit of water 1 tsp at a time and knead it through. If it is too dry, add a sprinkle of flour.
- Wrap it in plastic wrap (or in a bowl with a lid) and let it sit on the counter to rest for 30 minutes.
How do you shape the pasta?
- When you are ready to shape the pasta, unwrap the ball of dough and cut it into 4 pieces.
- Grab one of the balls of dough and wrap the other 3 in the plastic again to keep it from drying out.
- Shape the ball of dough into an oval and flatten it slightly. Run it through the pasta machine on a 1, 1-2 times. Next move up to a 2, then a 3, then a 4 and so on until you get to your desired thickness. I like mine around a 7 or 8. Sometimes the pasta sheet can get too long so feel free to cut it in half or thirds.
- If you are making lasagna, your noodles are done and you can add them into your lasagna just like this. If you are making spaghetti, move on to the next step.
- Lightly dust a baking tray with flour and then dust the top and bottom of your pasta sheet with flour to prevent sticking. Run it through your pasta machine cutter and then lightly dust in more flour. If you do not dust with flour, your noodles will stick.
- Boil in salted water for 1-3 minutes and then strain. You are ready to use!
What if I don't have a pasta machine?
That is no problem! Your noodles will likely not be as uniform as using a pasta machine but you can follow the same steps to making the dough and then divide it into 4 parts. This is where the difference comes in.
Roll the dough as thin as you can, using the rolling pin. Lightly dust with flour to prevent it from sticking to the counter.
Cut thin strips of dough in a straight line or you can make sure the dough is well floured, roll it up like a burrito and cut it that way.
The noodles are ready to use!
Can I make these ahead of time?
You definitely can! You actually have a few options on how you want to store the dough.
- You can store the dough in the fridge, airtight and in plastic wrap for up to 3-4 days. Let it come to room temperature and then use as you would.
- You can make the noodles, dust in flour and then store them airtight in the freezer. They will last around 2-3 months this way. You can cook them straight from frozen. If you allow them to thaw, they can get clumpy and change texture.
- You can drape the noodles over a wooden dowel and let them naturally dry. They need to be completely dry before they will store for any length of time so allow them to dry for 12-24 hours. Some of the pasta will break off and fall below so make sure you have a clean surface beneath your drying pasta. Store the pasta in a ziploc bag at room temp for up to 1 month. (Ensure you do a physical inspection before consumption as they can go rancid or moldy if not completely dried. )
