Enter: the ginger bug. No, not a garden pest. It is a bubbly little starter made with ginger, sugar and water- and it’s your ticket to homemade fizzy drinks without anything artificial.

What is a ginger bug?

A ginger bug is a wild ferment-think of it like the sourdough starter of the drink world. You “feed” it on a daily or weekly basis and in return, it gives you a naturally fizzy base you can use to make homemade sodas like ginger ale, root beer, berry fizz or whatever flavour combo your Pinterest board is dreaming of. 

Bonus: It is full of beneficial bacteria and enzymes. So yes, you’re basically making a probiotic soda that you control. No high fructose regrets here.

What materials do I need?

You only need 2 materials to get started with this homemade soda:

  1. A swing top bottle or mason jar to ferment the soda in. The swing top bottle that is linked comes with a funnel so you don’t spill too much! (Speaking from experience.)

What are the ingredients?

Since you get to decide what flavour of soda you want, the ingredients are super customizable.

  1. 1/4 cup of your strained ginger bug
  2. 3-4 cups of juice or other sweet liquid

 

When choosing a liquid to ferment, be mindful that it has to contain sugar for the bacteria to feed on. Some options are:

  • Fruit juices or any kind
  • Sweetened freshly brewed tea
  • Lemonade or iced tea

How to make it

  1. Combine the strained ginger bug liquid and your juice in your clean swing top container. Make sure you leave a few inches of space at the top (called headspace) so the ferment has room to expand.)
  2. Leave it on the counter for 2-4 days, ensuring you open it once a day to prevent the pressure from exploding your container and making a huge mess in your kitchen.
  3. After the 2nd day, try your soda and see if the carbonation level is strong enough for your taste. If it isn’t leave it another day and try it again. 
  4. When it is at the level you like, place it in the fridge to chill and slow the carbonation.

 

*Remember, more days isn’t necessarily better and it will ferment into a yucky taste with the potential for it to ferment into alcohol. (Obviously not safe for kids lol)

Tips and tricks

No fizz yet? Give it an extra day or two. Fermentation depends on temperatures and how feisty your microbes are.

Want more? Always save a bit of your ginger bug and keep feeding it like a pet. (Congratulations! You now have a sourdough soda situation! I find this ginger bug is far easier to maintain.)
