In this video, I take you through what I eat in an entire week for dinner. Dinner can be so tricky and time consuming so all of these recipes are quick and easy (under 30 minutes.) A lot of these can be made ahead for a quick, “throw it in the oven when you get home,” meal.
Without further ado, let’s dive into the recipes!

HAMBURGER SOUP
Ingredients:
1 Onion
2 Carrots
1.5 cups Frozen Mixed Vegetables
1 can Condensed Tomato Soup
Ground Beef (or Turkey)
Whole Wheat Pasta Boullion (any flavour)
Instructions:
Brown the beef with onions, carrots and mixed veggies.
While the beef mixture cooks, boil the pasta according to the directions.
Once everything is thoroughly cooked, add the seasonings, soup and water.
Let it cook until everything is hot and tasty.
Add pasta to a bowl and ladle the soup over top (if you leave pasta in soup, it gets overcooked and soft.)

STUFFED PEPPERS
Ingredients:
1 Onion
1 Can of Corn
Ground beef or Turkey
3 Cloves of Garlic Boullion (any flavour)
1 tsp each Garlic Power & Onion Powder
1 Can of Tomato Paste
1 tsp Maple Syrup
1 Cup of Rice (uncooked)
1 Cup of Water
Optional- Cauliflower Rice
For the Béchamel Sauce: Melt 1-2 Tbsp butter in a pan. Add 1 tsp garlic powder and 1 tsp boullion powder with a pinch of salt and pepper. Add 1-2 Tbsp of flour and let it cook for a couple minutes. Slowly stream in around 1 cup of milk of choice, whisking throughout until a smooth sauce forms. Pour over the peppers.
Instructions:
Cook the rice according to the package. For Jasmine rice, it is 1 cup of rice to 1 cup of water. I like to cook a big batch of rice at the beginning of the week and use it for bowls or sushi etc…
Brown the beef with onions and garlic. When it is cooked, add the can of corn and the rice (cooked.)
Add the cauliflower rice if you’re using it, here.
Add all the seasoning, tomato paste and scoop into peppers that are halved and cored.
Bake at 350 for 25 minutes.
TURKEY CUPS
Ingredients:
Ground Turkey
1 tsp each Seasoning Salt, Garlic & Onion Powder
1-2 Tbsp BBQ Sauce
1 Tsp Mustard Mashed Potatoes (made how you like)
Instructions:
Preheat the oven to 350 Degrees.
Mix the spices into the meat and divide equally between 12 muffin tins.
Bake at 350 for 25 minutes (ensuring they are cooked through.)
Top with mashed potatoes and bake for another 5-10 minutes until golden on the top.
Top with a small amount of gravy and add your favourite salad on the side.
DIY SUSHI
Ingredients:
1 Cup of Rice (uncooked)
1-2 Tbsp Sushi Rice Seasoning
Cucumber, Peppers, Avocado, Mango (or whatever other vegetables you prefer)
Nori Sheets
1 Tbsp Mayo
1 Tsp Sriracha Ground Beef or Turkey
3 Cloves of Garlic
1 Tbsp Minced Ginger
1 Tsp each Boullion, Garlic and Onion Powder
Instructions:
Cook the rice according to the package. For Jasmine rice, it is 1 cup of rice to 1 cup of water. I like to cook a big batch of rice at the beginning of the week and use it for bowls, stuffed peppers or fried rice.
Once the rice is done, allow it to cool slightly and then add the sushi seasoning.
While the rice is cooking, brown the beef with seasonings and garlic and onion.
Combine the mayo and sriracha sauce to create a spicy mayo.
Assemble the sushi by adding rice to a sheet of nori, then add the meat and chopped veggies, finishing with guacamole and drizzling with some spicy mayo. You can cut individual pieces, or eat it like a taco (I am sure there are some rules against this lol) Enjoy!
BEEF AND BROCCOLI:
1 Lbs Ground Beef (or chuck, or ground turkey)
1 Onion
3 Cloves of Garlic
1 Tbsp grated Ginger
2 Grated Carrots
1 Package of frozen broccoli
1 Tsp Boullion
1 Tsp garlic powder
1 Tsp maple syrup
1 tsp onion powder
1-2 splashes of Worcestershire sauce
1-2 Tbsp everything but the bagel seasoning
1/2 Tsp salt (to taste)
1 package of rice noodles
Instructions:
Brown the beef with the spices, carrots, garlic, ginger and onion.
Add the broccoli to cook and cover.
Taste and season to your liking. I find cooking is all about tasting and adjusting to your needs so feel free to improvise!
Meanwhile, cook the noodles according to package directions. Sometimes I use spaghetti noodles or rice and I have used cauliflower rice before.
Assemble and enjoy!
PIZZA DOUGH
(Remember, this is an indulgent recipe, not necessarily an eat whenever you want recipe. I like to have balance in the food I eat so I really enjoy what I’m doing!)
Combine 1 Tsp sugar and instant yeast with 1 cup of warm water. Allow the yeast to bloom.
Add 1 tsp salt and 2 Cups of flour and knead for 5 minutes.
Let it rest until double in size.
Stretch it to the shape you want, then top with whatever toppings you like!
Serve with a salad on the side and enjoy!
