In this video, we will walk you through a quick and easy breakfast idea that you can eat on the go. You can make it ahead for meal prep so you can have a quick and healthy breakfast at your fingertips! Simply grab it and go. 

This is a family friendly recipe (my kiddos and husband love it) and comes out to 250 calories and almost 10 grams of protein per serving.

RECIPE:

 

CRUST: 1/4 cup vegetable oil 

1/4 cup water 

1/2 tsp salt 

1 cup flour 

FILLING: ~6 eggs (or one for every muffin/ loaf you intend to make) OR one bottle of JUST EGG plant egg 

~ 1/4 cup milk of choice 

~ Salt and pepper to taste 

~ Toppings as desired… 2 slices bacon 1 grated carrot (cauliflower is also awesome!) 

INSTRUCTIONS: 

1. Preheat the oven to 350 F and start cooking the bacon on the stove. 

2. While the bacon cooks, start the crust by combining the oil and water and mixing vigorously until slightly thickened.

3. Add the salt and flour until a shaggy dough forms 

4. Form it into a greased pie plate or greased muffin/ loaf tins 

5. Mix the eggs with the milk, season with salt and pepper and pour into the crusts (evenly distributing if using a muffin tin) 

6. Top with toppings as desired and bake for approximately 40-45 minutes for a pie and 25-30 minutes for muffins. The tops should look set and slightly golden and if the crust is visible, it should also be golden. 

These will store in the fridge for 3-4 days if sealed well and can be frozen in an airtight container for up to 3 months. You can warm it up in the microwave to eat but I enjoy them cold!
