If you have ever thought about rendering your own tallow, or even done it yourself, you may be wondering how to store tallow for both short and long term use. There are some tricks of the trade I have learned after years of trial and error and I am so excited to share them with you! Let’s dive in.
You can make a beautiful batch of tallow that looks perfect, smooth, creamy and clean only to open the jar days or weeks later and find that the texture has changed.
This is where storage comes in.
How tallow is stored plays a big role in how it looks, feels, and holds up over time. Temperature, containers, and environment all matter and small missteps can make tallow seem like it “went wrong,” even when it didn’t.

Why Proper Tallow Storage Matters
Sure, you can leave your tallow in a big ol puck on your counter top but there are a few things to consider with that.
- It is super inconvenient to use. The pieces break off and leave you with a mess (who wants that?)It is hard to get the weight right and you end up needing to store the pieces that break off anyways.
- It shortens the shelf life substantially. Leaving it on the counter exposes it to germs, bacteria and moisture.
- It can also be one of the causes of inconsistent and undesirable tallow balm textures (more fixes in the smooth tallow toolkit!)
How to Store Rendered Tallow
In my opinion, the best storage solutions for tallow are the ones that:
- Keep your tallow airtight (the longer you can keep your tallow away from oxygen, the longer it will last.)
- Keep it away from moisture (moisture will equal mouldy, rancid tallow.)
- Keep it in a consistent temperature (preferably a cool one)
After a lot of experimenting, I have found a few different options that work well for me…
- In airtight mason jars. I love the “forjars” jars as they are way thicker than other brands! Highly recommend 🙂 I ladle the hot rendered tallow into the jars (make sure they are also warm or they could crack!) Throw the lid on and they seal quite well.
- In soap mold shapes. I can customize how much goes into each mold and pull a brick out any time I want to make a tallow balm.
- In an airtight glass container. You can chunk the tallow up and squish it in the container or again, ladle it into the warmed glass.
How long can I store rendered beef tallow?
The beautiful thing about tallow is the shelf life. If you store it airtight in the freezer after a very clean and proper render with no moisture left, it can last almost indefinitely.
If you leave it on the counter airtight, you should get 6 months to a year out of it.
If you store it in the fridge airtight, the shelf life increases to 18-24 months.
Tips to Maximize Shelf Life
Honestly, the biggest tips I can give to maximize how long your tallow lasts for is keep it away from moisture in a cool dry place. Moisture is the enemy of shelf life and will produce mold (been there when I was first learning!)
If you really want to make your tallow last, the freezer is the best place for it!
It is also a good general practice to label the render date so you always know your best before date (I have been guilty of not doing this but have made it an active goal to change.) You don’t want to get months down the road and feel like you have to throw any hard work away!

Even with the best storage practices, sometimes tallow can still turn out grainy, greasy, or runny. This is super common, and it doesn’t mean you’re doing anything wrong. It usually comes down to small factors like temperature, timing, or the balance of oils.
