I never thought I would be writing a blog post about goat milk ice cream but we have been overflowing in goats milk these days and goat milk ice cream is AMAZING. It is thick, rich and wonderfully creamy.
This goat milk ice cream has become a staple in our house and for good reason! It is super simple to make and uses wholesome ingredients. In my opinion it is way better than grocery store ice cream! Let’s dive in to the recipe!

What does goat milk ice cream taste like?
Goat milk ice cream has been a lovely surprise for us. I was expecting it to be a little… goaty? I don’t know why I thought that considering our milk has never had that taste but I digress. Goat milk ice cream is incredibly rich (due to goats milk being naturally homogenized) and with the egg, it makes a custard like ice cream, similar to Haagen Daas.
Ingredients you need for ice cream
The best part about this recipe is that it can be scaled up or down. I will give the proportions in the smallest amounts but feel free to double, triple or even quadrouple the recipe. I typically do 3 cups of goat milk for 2 ninja creami containers.
- 1 cup Goat milk of course! ( I am sure you can use grocery store milk but I wouldn’t recommend reconstituted goat milk powder)
- 1/4 cup sugar (I use white sugar but you could use brown sugar or even a liquid sweetener like honey or maple syrup.
- 1 Egg yolk
- 1/2 tsp vanilla extract (any of my other extract recipes found in my baking mix ebook would be amazing too!)
- Tiny pinch of salt
How to make ice cream step by step
Getting started
- I use fresh goats milk so I always start by straining my milk then adding it to a saucepan.
- Heat the milk until it is just starting to froth on the top (this is usually around 165F for me.)
- Add the sugar, vanilla salt and stir to combine until it is all dissolved.
How to temper eggs
- Now it is time to move on to tempering the egg yolk which can feel scary but I promise it’s not!
- Separate the yolks from the eggs into a bowl and use the whites for another recipe.
- Use the hot milk and sugar mixture and add a tiny splash to your egg yolk, whisking vigorously. You do not want to add it too fast or you can scramble your eggs! Yuck!
- Keep whisking and adding drops of milk until the eggs are the same temperature as the milk mixture and then slowly add the egg mixture to the milk as you whisk.
- Add the ice cream mix into your ice cream maker container (I use a ninja Creami) and follow the directions for use. If you don’t have a Ninja Creami, I would highly recommend it!
Different flavour combinations to try
This goat milk ice cream is amazing on its own (especially if you use my homemade vanilla recipe) but sometimes it is fun to switch it up! Before adding the ice cream to the containers, you could add:
Chocolate: 1-2 Tbsp of cocoa powder or 50 grams of melted chocolate
Strawberry: Add 1/4 cup of chopped or pureed strawberries
Coffee: Add 1-2 tsp instant coffee mix
Honey: Try replacing a little of the sugar with honey for a milk & honey ice cream!
You can also play around with other mix ins… I have had good success with oreos, chocolate bars crumbled up, sprinkles, and cereal such as cinnamon toast crunch! I add these right before serving so they don’t get soggy.
