It feels like everybody has fond memories of waking up on a lazy weekend and eating pancakes with their family. Pancakes are such a nostalgic food and so versatile in the way they are stored or prepared.
Today we will cover a wonderfully easy homemade pancake mix as well as ways to store it and cook.
We love this homemade pancake mix because it stores in the pantry for months and it can be made into so many different recipes (which we will cover below.) I really hope you love it as much as I do!

Why should you make your own pancake mix?
Making your own pancake mix has so many benefits.
- You save so much money. The cost of ingredients to make your own is just pennies (especially if you buy your dry goods in bulk) and once you have your airtight container, you are pretty much set on containers forever!
- You cut down on unnecessary waste. You will skip all of the cardboard and plastic that comes with the store bought dry mixes and limit single use items.
- You get to control the ingredients. Your family dislikes cinnamon? No problem! Want to cut down on sugar? That’s great too! Some family members like chocolate and others like blueberries? Add the fun ingredients when you’re cooking them!
- You can save so much time in the kitchen by having a pancake mix ready to go. By preparing a huge bulk mix, you can add the wet ingredients whenever the mood strikes!
What materials do you need to make pancake mix?
You only need a couple of materials:
- A mason jar or other airtight containers to store the mix
- Measuring cups and spoons
- A large mixing bowl for making the batter
What are the ingredients you need for the dry mix?
2 cups of flour (you can use all purpose, whole wheat or a combo of both)
1.5 tbsp baking powder
2 tbsp sugar (can be brown or white- maple syrup or honey would also work)
1/2 tsp salt
What are the ingredients you need for the pancake batter
1.5 cups of milk (you can use non dairy if you want)
1 tbsp lemon juice
1/4 cup coconut oil or butter (melted)
1 tsp vanilla
How to make the batter
Start by combining the milk and lemon juice in a large mixing bowl and set it aside for 5 minutes to curdle.
Next, add all of the other wet ingredients, give it a stir and then add the dry mix. Gently stir to combine. The batter will be thick so feel free to add more milk to thin it out as necessary.
The pancake mix is ready to use! Enjoy!
Can I use this batter for anything else?
Yes! This is a relatively thick batter and it lends itself very well to homemade waffles. You can just make the batter as the recipe states and then make the waffles as you would on a waffle iron.
The other thing I really like to make with this pancake mix is sheet pancake. To make a sheet pancake, you start by preheating the oven to 425 F and then make the batter as stated above.
When the oven is done preheating, grease a 9×13 baking dish, pour the batter in and cook for 15-20 minutes or until the edges are crispy and the top is no longer wet.
*Note: I find this is a fairly thick batter so it makes very filling pancakes. If you find the batter is too thick, you can add a bit more milk to thin it out.
Can you make these ahead of time?
Yes! There are a few different ways you can make these pancakes ahead of time.
- Making the dry mix and storing that in your scratch pantry.
- Making the pancakes and freezing them flat. You can reheat them in the toaster for a quick breakfast throughout the week.
- Making a sheet pancake and cutting it into squares to freeze and reheat in the toaster.
Note: They will store in the fridge for 3-4 days and in the freezer for 2-3 months. The dry mix will store for up to 6 months in the pantry (you can prolong it to 1 year if you use a mason jar vacuum sealer.)

Homemade Dry Pancake Mix

Ingredients
- Dry Mix
2 cups of flour (all purpose, whole wheat)
1/2 tsp salt
1.5 tbsp baking powder
2 tbsp sugar (white or brown)
- Wet Ingredients
1.5 cups of milk (cow, oat, non dairy, goat)
1 tbsp lemon juice
1/4 cup coconut oil or butter (melted)
1 tsp vanilla extract
Directions
- To make the dry mix
- Combine all of the dry ingredients in a large mixing bowl and then transfer to a quart sized mason jar or airtight container.
- Label your mix and store it in a cool, dry place until you are ready to use it.
- How to make the pancakes
- Mix the mix and lemon juice in a bowl and let it sit for 5 minutes to curdle.
- Add the coconut milk/ butter and vanilla extract.
- Gently mix in the dry mix into the wet ingredients until just combined.
- Make pancakes as per usual. Enjoy!

- I love this recipe because of its versatility. One of my favourite ways to make it is in a sheet pancake form. Follow the same instructions to make the batter but preheat the oven to 425 first.
