Imagine this… you wake up in the morning and have a craving for banana bread. You want it now! You reach into your pantry and grab your banana bread mix. In less than 5 minutes, you have fresh banana bread batter and you bake it up. Your house smells amazing and kids are happy!

Banana bread creates so many beautiful memories (which is a strange thing to say about a baked good) but it’s true! 

Banana bread that is fresh out of the oven is one of life’s simple pleasures. It is also the perfect way to avoid waste and create something delicious!

Since I make it so often, this banana bread mix comes in so handy! All I have to do is mix up the wet ingredients, add the dry and then I am ready to bake! If the ease and simplicity of this sounds appealing, let’s get into the recipe!

Why you should make this banana bread mix

Banana bread mix from the store is 4 dollars a box and contains some ingredients I just don’t feel good about feeding my family. Of course in a pinch they work but when you can make your own mix for pennies and with ingredients you can trust, why wouldn’t you! 

The other wonderful thing about this baking mix is that it is the perfect gift. So many of us have random old bananas we either toss or forget about and gifting this mix is such a great way for your friends to know how much you care all while limiting waste! 

I love making this banana bread (it also turns into muffins!) and having it on hand for quick and healthy snacks for the kids. We try to limit processed foods as much as we can (we are nowhere near perfect) but this loaf gets devoured! 

What materials do you need?

A quart sized mason jar- to store the mix. You can use any container you want but it has to be airtight or your mix will go rancid too fast. Mason jars tend to be the easiest and most cost efficient way to do this. I also love the look of a fully stocked pantry filled with mason jar mixes! I added a link to some mason jars on amazon but the best price I have found is at Walmart so I would check there first!

A large mixing bowl- I use these metal ones for most of my baking. I love that it has a grater attachment and lids for all of the sizes.

A spatula- For mixing all of the ingredients together and scraping the bowl down.

Measuring cups and spoons- for both the dry and wet ingredients

How many banana bread loaves does this recipe make?

This banana bread recipe will make 2 medium sized loaves. I always make 2 loaves so I can pop one in the freezer (all sliced up) for quick and easy snacks and have one for fresh eating. It will stay fresh for 3 days in an airtight container.

If you freeze it, this loaf should last up to 3 months airtight in the freezer. These loaves are the perfect snack as you can pull one out in the morning and it will be thawed by snack time! 

The dry banana bread mix ingredients

2 1/4 cup all purpose flour

1 cup white (or brown) sugar

1 Tbsp baking powder

1/2 tsp salt

*optional- 3/4 cup nuts or chocolate chips

Layer all of the ingredients in a quart sized mason jar, finishing with the nuts or chocolate chips. Add the baking tag (free download below) and you are ready to store or gift this banana bread mix! 

Wet Ingredients to make the banana bread

3 mashed bananas 

1 cup of buttermilk (make your own with 1 cup milk of choice and 2 tsp vinegar)

1 Tbsp vanilla extract (learn how to make your own here)

1/3 cup oil, melted butter or tallow (learn how to render your own tallow here)

How to make the banana bread

  • Start by preheating the oven to 375 degrees F.
  • Next, make your buttermilk by adding your milk and vinegar to a bowl and allowing it to sit for 5 minutes while you work on the other wet ingredients.
  • To a large mixing bowl add your bananas (they have to be ripe and speckled or they don’t mash very well.)
  • Mash them up very well using a fork or an electric hand mixer. The mixer will make them as smooth as butter. 
  • Add the buttermilk vanilla and oil to the banana bowl and stir to combine. 
  • Pour in the contents of your dry mix jar and gently stir to combine. Try not to over mix here. 
  • Divide the batter between your greased loaf pans.
  • Bake the loaves in the oven for 45-55 minutes, checking on them frequently to prevent burning. You can insert a toothpick in the centre and when it comes out clean, your loaf is ready! This loaf will be brown and crispy.
  • Allow the loaf to cool in the pan until it is cool enough to handle and then flip the loaf upside down to cool the rest of the way out of the pan. This is how you get those lovely crispy edges that give such a good flavour and texture to your banana bread!
  • Slice it up and enjoy!
