We have been on a journey to start making most of what we eat from scratch. We wanted something convenient and delicious that saved us money as well.

These baking mixes do just that. They are so easy and delicious!

I can’t wait for you to try it. I like to store these in a cool dark place and ensure all of them are airtight. If you are storing them for long term use, use a vacuum sealer to remove the excess air.

Materials needed:

Double Chocolate Muffin Baking Mix

Ingredients For the Dry Mix:

2.5 Cups of Flour

1 Cup Chocolate Chips

1 Cup of Brown Sugar

1/3 Cup Cocoa Powder

2 Tsp Baking Soda

1/2 Tsp Salt

Instructions:

Combine all of the dry ingredients in a bowl, mix well and then add to a 1 L (quart) jar. You can layer this if it is going to be a gift but I prefer to mix it all around since I double or triple batch it. 

To Make:

Preheat the oven to 400 degrees and then combine 1 1/3 cups buttermilk (I used oat milk with 1 tsp lemon juice) 6 Tbsp butter melted, 2 eggs and 1 1/2 tsp vanilla into a bowl and mix thoroughly. Add the dry mix and stir until just combined, being careful to not over mix. 

Spray or line 18 muffin containers and fill 3/4 of the way with batter. Bake in the oven for 16- 18 minutes or a toothpick comes out clean. 

Let them cool in the pan for 5 minutes and then flip them upside down on a cutting board or wire rack to finish cooling. They get super crispy this way! Enjoy!!

Better Than Boxed Brownie Mix

 

This is where I found the recipe!

Dry Mix Ingredients:

1 1/4 cups (249 grams) sugar

3/4 cup (75 grams) cocoa powder

1/2 cup (63 grams) all-purpose flour

1 tablespoon cornstarch

1/4 teaspoon salt

3/4 cup chocolate chips

Instructions:

Mix all ingredients together in a bowl and add to a 1 L (quart) jar.

To Make:

Preheat the oven to 325 degrees F and spray an 8×8 pan. I use a round pan with good success as well. To a bowl, crack 2 eggs and 1 egg yolk, 1 tsp of vanilla, 5 tbsp of melted butter and 1/3 cup of oil. Mix well and then add the brownie mix. Stir to combine, and pour it into the baking dish. Bake for 30 minutes and then let it cool in the pan. This is best the next day but it is very delicious immediately as well. Enjoy!

Apple Spiced Bread Baking Mix

Dry Mix Ingredients:

2 1/4 Cups Flour

1 Cup Brown Sugar

1 1/4 Tsp Baking Soda

1 Tsp Cinnamon

1/2 Tsp Salt

1/2 Tsp Baking Soda

1/4 Tsp Nutmeg

*Optional: 1/2 Cup Toasted Walnuts & 1/2 Cup Raisins

Instructions:

Combine all of the ingredients and mix well. Add it to a 1 L (quart) jar. You can also layer this in a jar if it is for a gift.

To Make:

Preheat the oven to 350 degrees F and spray a 9 x 9 pan. 

Add 1 1/2 cups applesauce, 6 Tbsp butter, 2 eggs, 1 tsp vanilla to a bowl and mix with a hand mixer until well combined. Add the contents of the jar and mix to combine. Pour it into the pan and bake it for 40-45 minutes until a toothpick comes out clean. Enjoy!

Granola Bar Baking Mix

Ingredients:

4 Cups of rolled oats

1 1/2 nuts or shredded coconut (a combination would also work)

1/2- 1 cup of chocolate chips

Pinch of salt and cinnamon

Instructions:

Combine all ingredients in a bowl and then add it to a large jar. When you are ready to make it, add 1.5 cups of peanut butter, 2 tbsp butter or coconut oil, and 3/4- 1 cup of honey. Slowly melt it down being careful not to over heat the honey and add the dry mix. Squish it into a greased 9×13 pan and then refrigerate for at least 1 hour. Cut it up and store in an airtight container. HERE is the full recipe if you wanted to watch the video!

Pancake & Waffle Baking Mix

Ingredients:

2 Cups Flour (all purpose, whole wheat or a mix)

1/2 Tsp Salt

1 1/2 Tbsp Baking Powder

2 Tbsp Sugar (granulated or brown)

Instructions:

Mix all ingredients in a bowl and then pour into an airtight container. 

To Make:

If you are making waffles, preheat your waffle iron. If you are making sheet pancakes, preheat the oven to 425 degrees F and spray a 9×13 baking tray.

Next, start with the mix. Add 1 1/2 cups of milk, 1 tbsp lemon juice, 1/4 cup coconut oil, 1 tsp vanilla extract and then add the baking mix and stir. 

Make the waffles or pour the mix into your baking tray. If you are making waffles, cook them until the steam dissipates and your waffle iron says they are done. If you are making sheet pancakes, bake it in the oven for 15 minutes and enjoy!
